From Buenos Aires to London, and now Dubai – Argentina’s hottest duo launches their third restaurant and bar venue globally in DIFC. Born out of the ultimate partnership between world-renowned Master chef Fernando Trocca and mixologist Tato Giovannoni, Sucre has now opened its doors in Dubai’s International Financial Center (DIFC), bringing a distinct Latin American flavor and passion for food to Dubai.
Sucre is a story of immigration. A conversation of Latin American and European influences – tucked in Dubai’s International Financial Center. Open fire cooking cranks the volume on seasonal ingredients. The menu tells the story of Master Chef Fernando Trocca, combining his open fire techniques from South America with a breadth of global influences. The wine list makes the same trip. Bottling the journey from Old World to New, Sucre boasts an extensive collection of the world’s finest grapes.
Since its original launch in 2001 in Buenos Aires, Sucre has been coveted as a leading concept in contemporary Latin American cuisine, being featured in the Latin American 50 Best Restaurants. Hailed as chef and master of open-fire cooking, Chef Trocca combines traditional open fire techniques from the South American continent with a breadth of global influences that have shaped the contemporary cuisine of his home city and inspired his restaurants across the globe while staying true to his heritage. He has built an international reputation for simple, stylish cooking combined with the architectural sensibility of his restaurants. Sucre’s approach heavily relies on carefully sourced, fresh, high quality ingredients prepared in exciting and unexpected arrangements – blending Italian, Spanish and Latin American influences.
Master Chef Fernando Trocca: “My vision for Sucre Dubai is to continue developing around the very concept that has permeated throughout my career. The urge to translate the essence of my roots, family and home country onto the language of a universal, cosmopolitan diner is reflected in Sucre’s experience” Guests can expect an ever-evolving modern menu curated to offer a stylish simplicity to some of South America’s world-class choices ranging from classic King Crab Tostada to Argentinian Bone In Ribeye and Squid Ink Paella – not to mention a punchy Monkfish Tail with XO Sauce & Black Beans and South America’s common dish Empanadas with aged cheese and onions.
With an ever-evolving modern menu, Sucre’s dishes are the results of open fire cooking, marrying charcoal and wood and carefully sourced fresh ingredients. Restaurant’s menus are best enjoyed sharing style or traditionally.
For a true Sucre experience, the restaurant bar is led by illustrious Argentinian bartender and owner Renato ‘Tato’ Giovannoni (winner of the Altos Bartenders’ Bartender Award 2020). Considered one of South America’s most celebrated bar operators and awarded one of the world’s best bartenders, Tato has played an integral role in the success of Sucre since the start of its flagship in 2001. Known for embodying the color and sounds of 80s Buenos Aires, guests can expect a cocktail menu reflecting the spirit and rebellion of this period, featuring eccentric and passionate cocktail mixes.
Sucre’s modern menu offers a stylish simplicity to some of South America’s world-class choices. The kitchen is a representation of traditions and heritage shaped by global influences. From huge grills to wood ovens, our dishes are cooked over charcoal the Argentinian way, using embers rather than live flame. While restaurant remains true to the traditional open fire techniques, the menus are prepared in exciting unexpected arrangements blending Italian, Spanish and Latin American influences.
Designed by Japanese architect Noriyoshi Muramatsu, the restaurant maintains a similar look and feel across all three venues – using a warm palette which nods to the brand’s heritage, combining the grandeur of Argentinian history with raw, industrial features and bespoke glass chandeliers. Theatrical in scale, the large open-plan dining area is flanked by an open kitchen, allowing guests to catch glimpses of soaring flames from the various wood fired cooking techniques.
The venue will feature a bar, lounge, terrace and restaurant including an evolving roster of resident bands to bring the best Latin beats to the heart of Dubai. Putting a distinct Latin American passion for flavor at the forefront, Sucre is set to offer a simple yet seductive culinary experience that steers away from the traditional perception of Dubai’s dining scene.
