Egor Sharay: Congratulations on your new role as Executive Chef at At.mosphere! Can you share your vision for the new menu and what diners can expect from your culinary direction?

Yannis Sgard: Thank you for the warm congratulations! My culinary vision is deeply rooted in my fine dining background and the rich traditions of French cuisine. I am passionate about showcasing the quality of ingredients and letting their natural flavours shine. Each dish I create tells a story, drawing inspiration from my personal memories and the culture behind the ingredients. For me, the heart of any dish lies in the sauce – it is where the magic happens, elevating the flavours to create a truly unique experience for our diners.

ESh: How do you plan to combine the elegance of fine dining with the unique setting of the world’s tallest building Burj Khalifa? Does the location inspire any particular dishes?

YS: The Burj Khalifa provides an extraordinary setting, offering the perfect backdrop for a truly unforgettable dining experience. I believe the elegance of fine dining is elevated by the breathtaking views and atmosphere of such an iconic location. My vision is to combine the finest local and French ingredients to craft dishes that celebrate both rich flavours and culinary traditions, presenting them in a sophisticated and refined way.

The sheer height and grandeur of the Burj Khalifa inspire me to create dishes that reflect the beauty and magnificence surrounding us. My goal is to design a menu that delivers exceptional taste and tells a story, connecting our guests to this remarkable setting and enhancing their overall experience.

ESh: How do you approach creating a balance between innovation and tradition in your dishes?

YS: I have a deep appreciation for the traditional techniques and flavours that have been passed down through generations, especially those that define French cuisine. When crafting my dishes, I begin by honoring these classic methods and ingredients as the foundation of my work. From there, I enjoy experimenting and introducing modern twists that add a fresh, innovative touch.

My goal is to respect the roots of French cuisine while pushing boundaries to create a dining experience that surprises and delights our guests. This balance allows me to preserve the essence of tradition while embracing creativity, offering something both timeless and exciting.

ESh: Is there a particular ingredient or flavour profile that excites you right now, and how are you incorporating it into your dishes?

YS: Right now, I am particularly excited by tandoori spice. I am drawn to the delicate balance of flavours it offers – aromatic, warm, and complex. One of my signature dishes features langoustine paired with these spices, where the tandoori adds an unexpected yet harmonious layer of flavour that elevates the seafood. It is a wonderful example of how I like to incorporate global influences while staying true to the refined techniques of French cuisine.

ESh: Do you plan to incorporate any unique techniques or technologies into the presentation or preparation of dishes at At.mosphere?

YS: At At.mosphere, I prioritise traditional, hands-on techniques over extensive use of technology. While I appreciate innovation, I believe that manual preparation brings out a higher level of quality and intricacy in each dish. This approach allows me to fully express my creativity and focus on the finer details, ensuring that every plate reflects my culinary vision and passion. It is this personal touch that I believe elevates the dining experience and makes it truly special.

ESh: How do you want guests to feel when they experience your food? Is there an emotion or memory you aim to evoke through your dishes?

YS: I would like my guests to experience a profound sense of warmth and joy when they taste my food. Each dish is crafted to evoke cherished memories and emotions, creating a connection that goes beyond just taste. My goal is to offer a memorable dining experience that brings them closer to the essence of French cuisine and its rich heritage, while also providing a moment of comfort and delight.

ESh: What motivated you to pursue a career in the culinary arts, and when did you realize this was your calling?

YS: The challenge of losing my father at a young age had a profound impact on my life, and it was his passion for cooking that sparked my love for the culinary arts and shaped my dedication to the craft. That experience taught me the profound importance of family, tradition, and creating meaningful moments through food. It continues to inspire me to infuse love and depth into every dish I prepare, honoring his memory with each plate I serve.

ESh: When you’re not in the kitchen, how do you like to unwind? Does travel or other cultural experiences influence your cooking?

YS: When I am not in the kitchen, I love to unwind by spending quality time with my family. We often cook together, explore new recipes, and share meals, which is a wonderful way to connect. Travel plays a significant role in shaping my culinary approach. Experiencing different cultures and cuisines constantly inspires me to bring fresh flavours and techniques into my dishes. It is all about infusing those joyful moments and rich experiences into the meals I create, making each dish a reflection of those discoveries.
