Drawing from its Italian roots, Timo directly translates to ‘thyme’ in Italian, which is reflected in the restaurant’s authentic culinary offerings. Guests can enjoy a selection of classic Italian dishes, including pasta, antipasti, pizzas, salads, cured meats and meats from the wood and charcoal oven. A diverse beverage selection compliments the food menu, including a selection of grape, hops, sparkling, cocktails and mocktails. Al Jaddaf Rotana Complex Executive Chef Chadi Saloum, whose culinary accolades have earned him a formidable reputation in the Middle East’s dining scene, is the mastermind behind the menu.
Drawing on over 26 years of experience, Chadi has a clear food philosophy that food should be simple and pleasing enough to be understood, yet unique enough to be compelling. Working with a team of highly experienced chefs, he has developed stand-out dishes for Timo, including shrimp saffron risotto with crushed tomatoes, asparagus and shellfish broth, and veal scaloppini with lemon, capers and linguine napolitano. For the more adventurous diner, there is squid ink pasta with creamy mascarpone, prawns, cherry tomato and ruccola – representing a menu that beautifully combines modern and traditional Italian cuisine.
